Bulk Everyday Waffle and Pancake Mix


This makes 4 times the original recipe:

7/8 c. Powdered Eggs
4 c. Potato Starch
4 c. Sorghum Flour
2 c. Tapioca Flour
2 c. Corn flour or Masa
1 c. Sugar
1/4 c. Baking Powder
8 tsp. Baking Soda
4 tsp. Salt
6 tsp. Xanthan Gum

Combine all the above ingredients thoroughly and store in an airtight container.

To 1 c. mix add 1 T. freshly ground flax seed, 2 T. Olive oil, and 1-1 1/4 c. milk depending on desired consistency.
Note: You can omit the powdered eggs from the bulk mix and add 1 egg to the milk and olive oil when making up the batter.

Hello - had a question about waffle makers. Mine is an infiniti Supreme -
It takes 15 min. to make 2 waffles!
What brand is yours, and how long does yours take to make? I have loved this blog - will you be doing recipes on your new blog?

Hi,
Thanks for the comments, I wonder sometimes if anyone is still reading this blog. My wafflemaker is a cheap $10.00 Walmart special. It takes about 4-5 minutes per waffle. I use it weekly and haven't had any problems with it in over 2 years.

I am planning on doing some more recipes on my new blog. I am in a transition phase right now. I am trying to get away from so many starches and playing with some new recipes. They are coming!!!
