Rachelle's BBQ Meatballs and Rice


This recipe comes from my neighbor and good friend Rachelle. She brought it to a New Year's Day party and had no idea I was eating Gluten Free. It turns out the recipe was GF and I made it again the very next night!

Rachelle’s Yummy BBQ Meatballs

Meatballs:
1 ½ lb hamburger
1 chopped onion
Salt and Pepper
1 egg

Sauce:
3 T. vinegar
2 T. sugar
2 T. Worcestershire
1 c. catsup
½ c. water
6 T. chopped onion
salt and pepper to taste

Rice

Thoroughly mix meatball ingredients and set aside. Combine all sauce ingredients in a large fry pan. Bring to a boil and reduce heat to simmer. Using a cookie scoop add meatballs to boiling sauce. Cover and cook 30 minutes. Remove lid and continue cooking until sauce thickens. Serve over rice.
