GF Food Storage 2 "The Flour Party"

Today was the day.

I got the new Wonder Mill out of the box and gathered rice, amaranth, brown rice and millet and started grinding. It went smoothly, the grinder did clog up once when I was grinding the amaranth but I cleaned it out and it started back up again. From then on I added the amaranth slowly instead of all at once. Everything else I could dump in and leave it until it was done grinding. I didn't bother to clean out the container in between batches of different kinds of flours. Just for fun I wanted to see how much flour comes from 1 cup of grain. I measured out 1 cup of amaranth and ground it into 1 3/4 cups of flour. I do like the Wonder Mill better than my K-tec I used for wheat flour before going GF. It cleans up easier, runs quieter, and grinds faster.

I made up 8 bread "mixes" which I am hoping will last me 3 months. I lined up all the ingredients, labeled large baggies and made them up assembly line style. I am going to store them in the freezer because they contain ground flax seed. I also made a bulk batch of Amaranth Pancake and Waffle Mix and Everyday Pancake and Waffle Mix.

It was very satisfying to see all the different kinds of flours and the grains they come from. I also like seeing all my containers full and knowing that I have mixes on hand.

Hi,
Have you tried measuring 1 cup br rice grain to see how much flour it produces? I am considering getting a mill and weighing the pros and cons. Anything you can tell me would be appreciated. 8-)

Hi Lori,
I didn't measure the brown rice flour. I am not planning on getting the mill out for a few months, is that soon enough to know? I would guess it would be very close to the amaranth.

I am so glad I purchased a mill. It is comforting to have all the rice and grains in storage and to use flour that is fresh. It was quite an expense at first but I think it was worth it! I paid under $10.00 for a 25 lb bag of brown rice and made all of it into flour. I didn't measure the grain/flour ratio but I know just a few lbs of brown rice flour is almost $5.00 at my Whole Foods Market. I think the financial payoff will be in the future.
