Tortilla Soup


This recipe came from the Ro-Tel tomato can. We have been making it for a few years and it is a favorite. It can be made in just 10 minutes and is very satisfying.


2 cans Ro-Tel diced tomatoes with chilis

14.5 oz chicken broth

1 can refried beans

1/2 c. frozen corn

2 c. cooked, shredded chicken (or you can use canned)


Combine tomatoes, broth, beans, and corn in a stockpot. Simmer 5 minutes. Add chicken and cook until heated through. Garnish with broken corn chips, shredded cheddar cheese, sour cream, sliced olives, and guacamole.
Note: You can also dump all ingredients into the crockpot and cook on low for 2-3 hours. I would not recommend this recipe for young kids, the tomatoes make it very spicy. You could use regular tomatoes or tomatoes with green chiles and no heat.
