GFCF Carrot and Flax Seed Bread with Cream Cheese Spread

GFCF Carrot and Flax Seed Bread

1 c. sugar
¾ c. oil
2-3 eggs
1 ½ c. GF flour mix
1-2 Tbsp. ground flax seed
1 tsp. cinnamon
1 tsp. baking soda
1 c. packed finely grated carrot
½ c. chopped pecans or your favorite nut

Cream together sugar, oil, and eggs. Add dry ingredients; mix well. Stir in carrots and nuts. Pour into greased 5x9x3 inch pan. Bake at 350 degrees for 50-55 minutes.

Optional spread:

A great topping for this bread is 4 oz cream cheese mixed with 2 T. honey. Spread on individual slices.
